Sipp'd Drinks - Rhubarb

We drove up to the Yorkshire Rhubarb Triangle at the end of March to meet the Cook family, 5th generation rhubarb farmers. Their indoor rhubarb is grown in the dark, hand-harvested by candle light and is absolutely delicious.

We've pressed the rhubarb to extract its juice and have paired this with unrefined cane sugar, Essex sea salt, a small amount of apple cider vinegar and a mix of black & pink peppercorns for some background complexity.  

Rhubarb is often paired with apple or ginger, but we wanted the true taste of this vegetable to shine through - that's right it's a vegetable!! As well this being our first seasonal Soda, it's also our first soda made with vegetables.
